Fitting on number of points (x,y,z)

I have a set of discrete data points (x,y,z) and (x,y) are forming a square and z is the intensity. Inside this square a z points form a peak, easily seen plotted with "scatter3". I want to fit on these points a Poisson surface. No glue how to do that..
